Even if they would go for putting liquidated damages in the contract the clause would be difficult to enforce. If the deadline passes without completion they'll come up with decent reasons for the delay such as bad weather, materials not available, etc. So the liquidated damages wouldn't apply.
On the other hand, I think the the carrot of a good bonus will help keep them focused on finishing the job sooner.
