I turned the A/C off because the hot air was unbearable. I tried turning everything off and on. Slid the thermostats up and down. It only "resets" when I turn the truck off and back on.

My father truck did the same thing. He had to change some air intake valve on the a/c. Because it would stay open and let the hot air flow. This is a common problem on Chevy's trucks.
