Crazy that this stuff is out there and that less-than-reputable restaurants could use this to think you're getting a quality cut of beef.

Crazy. I just watched one on fake filet. Never even thought about it

I wonder if a lot of chains use this, especially like lower-end steakhouses and places like Applebees?

Because technically you could be "hand-cutting steaks" that have already been pre-formed and pre-processed

I saw this for the 1st time yesterday... just unreal that some places substitute this for steak... it seems that with the price of Brisket real steak would be cheaper

the finished product looked pretty close. He also said that he should have used more glue and more compression like the restaurants

I would hope not but I'm sure the lower end chains use it to keep costs down. If any decent steakhouse got caught with this in their kitchen then that would be a death sentence

If you eat deli sliced turkey, you're consuming this stuff. No deboned turkey breast is the size/shape of those Jenny-O chubs of turkey...look closely and you can even see the disparate muscles pasted together to make the bigger hunk.

I don't see the need for this really. Brisket prices are almost what Ribeye prices are. Not really saving anything by the time you add the money for processing.

I think he was using brisket to show the process. It would work with any scraps of meat leftover from butchering.
