I have had it ground into a patty and it's decent. It kind of has an "oily" slightly gamey taste but not bad. From what I gather, bear meat, specifically black bear meat, is loaded with parasites so it always has to be cooked well done. I wouldnt mind trying some spare ribs or a roast sometime as a bear is the no.1 animal on my hit list.
