My advice is to restart as a wood elf, raise bow and sneak to max (There's a way to get an Ebony Bow early on), and at the very least get your fus ro and dah shouts minimum. That'll let you toss giants and send trolls off cliffs.

Once you have the hang of the game, crank the difficulty to max otherwise you will get a bit bored.
Even max is easy once you've leveled smithing, alchemy and enchanting to max because then you can essentially turn yourself into a god.
Having said that. It is possible the tweaked difficulty with patches so I don't know if that happened.
