he steamed these crawfish for a good ten minutes and they were not overcooked. Not saying he's right, but have you ever boiled crawfish in straight water to see how much they could handle?

I'm not sure if I understand. I edited my original post because I misunderstood the OP and that the old man was doing a steam method.

If you are asking if I know how long is too long for boiling crawfish, then I don't know the exact answer or "breaking point" where crawfish get overcooked and the meat breaks when you peel. I do know that they are cooked perfect after the water comes back to a full boil.
