Hard to say. I've been wondering about them also. I'm guessing they are bits of video that Saul has captured that we're seeing, but no idea on the why/how.
Maybe erroneous footage from some early S'ALL GOOD MAN commercial prototypes? Or perhaps video evidence in a case of his, or against him?
I can't speak for all of them, but for this episode with the tarantula walking around and the episode with the drawer full of cell phones, they allude to scenes in Breaking Bad. Remember the tarantula near the train tracks in Season 5 and Saul Goodman's drawer of cell phones?
