Good call on the panchetta. Didn't even think of that.
So i'm going with panchetta/goat cheese stuffed bacon wrapped dates. Will be east to transport and heat.

As hungryone stated, beware it's a pretty labor-intensive process to make that many stuffed dates. I made 2 dozen once and it took a lot longer than I thought it would.

If you decide on something else, consider the shrimp and andouille mini muffin cakes in the recipe book. If you can't get andouille, sub smoked sausage.
I think Otis or maybe Rat put a recipe in the book for Cousin's Creole tomato dressing or make a remoulade sauce. Make ahead, bake ahead, good at room temp and easy to transport.
