I haven't just up and left one, but once when the "so does this sound like something you'd be interested in" question came up, I told the guy I appreciated his time, but it wasn't what I was looking for and we broke off the interview at that point.

I was also in between jobs once and took a "warehouse supervisor" job. Although it didn't come to light during the interview process, the only person I was supervising was myself, and I was packing and unpacking boxes all day. After I finished the third day, I went in and told the guy who hired me it wasn't working out and wasn't something I was interested in doing. I told him don't worry about paying me for the three days of work, that I considered it a valuable learning experience. I started the graduate school application process the next day.
