Almost all HS athletes are woefully inferior to D1 prospects, so film just shows them doing what they should do, which is dominate.
You can also get a feel for fundamentals and football IQ from film. It is a tool for evaluating prospects, not the end all, be all decision maker for coaches.

I agree that this is obviously just one tool coaches use. I will admit I am more impressed when an athlete dominating while playing in a higher classification, though that doesn't necessarily mean their opponent is high quality.
This is one reason Derrius Guice's highlight video is so impressive. Dominating on virtually every play and yes those are the p,aye that make a highlight video to begin with.
