How high end are you talking?
High-end multi-location or high-end single location?
I know for places like Del Friscos you have to have at least 5 years experience waiting tables and they would like to see no less than 2+ consecutive years with at least one reputable restaurant.
3+ LEGIT references from current industry managers.
Background and Credit check
You are also subject to a drug test (HAIR TEST) at some of the nicer places here in Dallas
