I ate at one in Tucson a long time ago and I distinctively remember the food sucking A LOT.

I'm not sure if it's up to the individual franchisee or not in determining what recipes to use, but there was a huge Facebook pushback on the New Orleans and Baton Rouge locations. They tried to promote the return of the original recipes but that point, even the Panchos loyalists had disappeared. Plus, they were charging normal restaurant prices. People were used to cheap prices for mediocre food. The price point took away from the nostalgia as well.
