In Taos, Eskes Brew Pub has a great burrito w/ green chile stew over the top of it. Get an 10,000 foot stout too. They have a Green Chile beer but I'm not a fan of spicy beers.

Huevos Rancheros or chicken fried steak and eggs at Perea's on Central (route 66) are pretty spot on too. Always take the waitress' advice and stay away from a particular color sauce if they say it is too hot that day. Otherwise, christmas all the way!
