I've always heard steel is one pattern tighter in chokes. Example, a modified choke will be like a full choke with lead.

Steel does generally pattern better than unplated lead because it's harder and stays round, or at least that's the theory.

I've been shooting squirrels/rabbits with fiotchii lead and what I've pulled out was still completely round.
