The investment route is good(contribute to a savings acct/bonds/coins etc) but make sure to actually get them a cool toy or something they can actually unwrap, play with and appreciate now.
I received many "investment" gifts over the years. One uncle would give me a check for $1000 every Christmas. Sure that's badass now, but at 5 I hated his gift b/c it wasn't a toy.

When my nieces were 1-7 years old you could never go wrong with a doll.

My nieces by the time they were 8 or 9 liked to shop (pick out their own clothes) and liked Old Navy gift cards.
