I made my first roux and gumbo last night. It turned out really good, but it took a long time. Not judging anyone for jar roux.

I can make a roux just fine but I usually use jarred roux. No one complains and I don't have to stay at the stove and stir. Good stock, fresh trinity, smoky sausage and dark chicken meat are the keys to good gumbo IMO
