My parents are ready but the trees are about 16 years old. I don't know if that makes a difference or not.

I actually read something about the cold temps triggering something in the fruit.
Something I only recently learned is how dam long you can leave them on the tree. Last year I ate some off of a friend's tree when we went to a crawfish boil at his house at the beginning of May.
Leave a few and see how long they stay good. You'll be surprised.
