I'd ease into it. Start with some hero westerns with John Wayne like the Horse Soldiers. Maybe do a little Bonanza watching. Rio Bravo and the Magnificent Seven are also good ones.

Your next step should be Gold of the Sierra Madre. Awesome stuff. This will help you transition into the anti hero westerns and the more intense ones like Outlaw Josey Wales and TGTB&TU.

Only when you know you are ready should you go after Once Upon a Time in the West and Unforgiven. Those are master peices and might be too much for virgin eyes.

Dances With Wolves is awesome, don't let anyone tell you different. Find the extended version though. It makes more sense.
