Get pork belly and cut into 1 to 1.5 inch cubes. Put in the pot and add enough water to almost cover. Cook out the water and you'll have rendered enough fat to fry in at 325+. When golden, pull, crank the heat to 380+ and put the cracklings back in for a minute or so. Pull, drain and season with your fav creole or cajun seasoning.
