I'm about 5' 11" 210 right now. Young and we have a rancher at the house I can rock and get out of the mud but man it's beat up.

A rancher with a drop basket is really all you need then. Put some 26" grips on it and you own the trail

If you're going to do any real riding in it at all, then go with a bike, avoid the ranger. They're more comfortable for hunting/pleasure riding, but for riding in the mud you're going to be replacing parts left and right. Just not enough ground clearance I think. Why not split the difference and go with a little bigger Polaris bike? You could go with an 800 sportsman and have plenty enough bike to do anything you wanted to. Just avoid those silverback tires.

ETA:
I wouldn't be afraid of used bikes nessicsarily, but I would avoid looking at anything that's been snorkeled or had the radiator lifted.
