Roast some tomatoes and some jalapenos. You can serve them separately and/or make an aioli of each or mix together in one aioli.

I don't put a lot of things on burgers, but for a bar, it'll be fun to have the options out. Don't over salt your meat if you salt it at all because some of the toppings are going to be salty. Put out some freshly cracked pepper and salt so folks can do that themselves.

You could go all out and all Paula Dean with some toasted donut halves along with a variety of other types of buns and some fried eggs.

In addition to bacon, you could have crispy pieces of pancetta. Just put the rounds in the oven and they'll crisp right up.

Roasted hatch chiles, sundried tomatoes, roasted red bell pepper slivers...
