If you don't want to do all inclusive, I'd suggest St. Maarten (French side) or BVI. St. Maarten has plenty to do, a ton of beaches and good food. Rent a jeep a drive around the island.
BVI and St. John are nice, but very quiet. Beautiful water.
The resorts at St. Lucia are nice- Ladera & Sugar Beach are recommended. They opened a Hotel Chocolate that looked nice as well. Outside of the resorts, I didn't think too much of St. Lucia.
I'd stay away from St.Thomas and Caymans.
