Yeah I mean if I was a demon or ghost or whatever I would just go to the salt line and blow on it til it separated

actually, if you watch any lore based show, you will actually see that nothing "evil" can even be in the presence of the salt.. like.. they real in pain when they get within a few feet of it, etc.
So the evil entities can't even get close to it, but all it takes is a "gust" - that's one reason I'm glad the show kinda got away from the salt lines
(P.S: Sleepy Hollow also used the salt lines in the first season, and it ended up as well for them as it did for Sam and Dean)
I would like to point out tho, that the salt lines almost ALWAYS work for innocence in Supernatural, except for a few instances here or there (season 4 comes to mind )
