Make sure you keep them covered in ice and ensure the melt water is drained out.
I've kept fish like this for several days, but I wouldn't want to try a whole week.

This and I would definitely make sure you drain the water out. Fish will hold up really well for extended periods of time if kept cold and 'dry'. Don't let them sit in water. I would suggest bringing zip lock type bags to seal the fish up and keep them dry while under the ice.
