But part of me is on the same page as you. Since I've been out for so long, what would be an easy degree?
I see the appeal of an "easy" degree, but if you're only able to take a couple of classes each semester, I'd really give some serious thought to working toward an undergrad that would open up your ability to be employable.
Engineering, accounting, nursing, et. al.
