Okay - they did mention a little bit at the beginning about the limited number of torpedoes and bio-gel circuit replacements they had. Part of the strength of the ship is that is was engineered and designed to go longer between shipyard maintenance. Couple that with Torres' Maquis experience with improvising.
Plus, there were space faring species all throughout the Delta quandrant. It must be assumed that they cobbled together what they needed from what was availabled - adapted some, incorporated others - to keep the ship running. I suspect that Seven of Nine helped, somewhat, with Borg technology during the latter years.
(See? Not so impossible after all.)
