S.O. got me a carving set from Warther & Sons.
Very well made and balanced. Knives use S35VN steel (58-60 HRC) and are a great value compared with Wustof, Henckels, and other high-end makes. The carving knife has a thin profile comparable to a Shun or Miyabi and breezed through the traditional Christmas standing rib-roast with a little honing before use. Definitely looking forward to adding more to the collection.

Bought a cheap Old Hickory skinning knife off of Ebay. It's made in the USA by the Ontario Knife Co. It's a great knife. That looks nice too.

Had a set of those and would be my choice for a camp set.

I haven't seen anything really comparable for the money yet. 9" French-style chef's knife for $100 is a bargain. My 8" Miyabi 600D retailed almost double that and uses a VG-10 core.
