Recently I made a rub with roasted chilies etc. for a pork tenderloin that was fantastic. I saved some of it to throw in my next chili batch.

Toast all of these in a pan and then grind into a powder:

2 New Mexico chiles
2 Guajillo chiles
1 teaspoon pepper flakes
1 teaspoon oregano
1 teaspoon black peppercorns
2 tablespoons whole cumin
2 tablespoons fennel seed
2 tablespoons mustard seed
1 teaspoon thyme
1 teaspoon marjoram
1 tablespoon kosher salt

I make mine with pork loin, pumpkin, orange marmalade and siracha.
