What kind of knife is that dude working with?

A mexican that's handy with a knife...... Color me shocked......

I posted that on my fb the other day. He's an artist with deer skinning for sure

We always have used the rock and truck method. Hang from the neck, skin to the shoulders, ring the feet. Then roll a rock in the hide that is hanging at the shoulder. Tie a rope to the bundle, and attach to the trailer hitch of the truck. Drive the skin right off. Out of dozens of deer, we have only taken a head off twice.

Technically the arse and rear legs were already skinned and I believe the anus dissected from the rump prior to the video starting.

and why does he cut holes in the ribs?

and why stab the roasts?

Its pretty clear there were some time saving tricks employed, but impressive with a blade none the less.

Stabbing the hams would piss me off though.

Gutting deer is for the birds. I can skin and debone a whole deer while hanging and not gut it in about 10 minutes. I can even get the tenderloins out. I'll never gut another deer.
