I don't have any misconceptions that it would be a true jambalaya. It will be a different dish. I'm just feeling the challenge.
I may get some fish to start the process. It will flake away to nothing but could create a nice flavorful gratin.
I love saying gratin, now that I know what it is.

Why does it always turn into something like this? The OP asked for a veg recipe, not a 'reason' why his guest should eat meat.
