I make the tackle about 25% of the time in open space. Very frustrating. I normally faceplant and allow the carrier to gain an additional 10 yards. I also hate when they throw to the flats and I can't see the receiver. I too would like to hear some recommendations for improving the defensive gameplay

Change your camera view to Wide. You can see the field. Or you could go one step further and go to coordinator camera and it would should you basically the entire field from endzone to endzone.
