So here's my ingredients for my pumpkin saison I plan on making Monday. Got the idea from a Pumpkin Saison recipe posted in Zymurgy last year.

3 lbs. Canned Organic Pumpkin
1/2 lb. rice hulls
50% 6 row
4% Melanoiden
3.3% Crystal 60L
3.3% Victory Malt
1 lb Maple Syrup (6.6%) - at knockout
1 lb Wildflower Honey (6.6%) - at knockout

.7 oz Magnum 60 min. (28 IBU)
McCormick Pumpkin Spice (1 tsp) at knockout

Wyeast 3711 French Saison

Estimated OG - 1.073
Estimated FG - 1.006
ABV - roughly 9%

I want it ready by Thanksgiving. Thinking about adding some oak chips to this as well.
