this is one of the reasons I'm looking into brewing saisons, at least until I have a way to control fermentation temps.
as for the double-pitching conversation, the only time I used two vials was WLP004 Irish Ale, and my OG was 1.084, and it fermented like a champ. Was 1.028 after a week and 1.024 at bottling, with the bourbon added
