For the 80s, I'd take Brett Saberhagen. He was awesome, he just had arm troubles and his career ended early.
And taking Dale Murphy as a 1st baseman over Eddie Murray is insane. I'd probably go:
C Fisk/Carter (take your pick. I unreasonably love Fisk)
1B Murray
2B Sandberg
SS Cal
3B Schmidt/Brett
RF Dave Winfield
CF Dale Murphy
LF Rickey Henderson
DH Yount
SP Saberhagen
SP Doc Gooden
SP Hersheiser
SP Fernando
RP Eck
