For the 80s, I'd take Brett Saberhagen. He was awesome, he just had arm troubles and his career ended early.

And taking Dale Murphy as a 1st baseman over Eddie Murray is insane. I'd probably go:

C Fisk/Carter (take your pick. I unreasonably love Fisk)
1B Murray
2B Sandberg
SS Cal
3B Schmidt/Brett
RF Dave Winfield
CF Dale Murphy
LF Rickey Henderson
DH Yount

SP Saberhagen
SP Doc Gooden
SP Hersheiser
SP Fernando
RP Eck

All of them had certain years where they were completely dominant.

Sab - '89
Hershisher - '88
Doc - '85
El Toro - '81
Eck - '88-'89 (except Gibby's HR )
