Yep, eye appeal is sucking. I added some grated carrots. The taste is good, but I also have some baby summer squash that a friend gave me from her garden and I think I'm going to add that. I also have some leftover grilled veggies, but I don't know about adding a grilled flavor.
Neauxla, I do make Tom Kha Gai. Can't say I always use the same recipe, but I will look for one that I've used recently.

The good things about the soup:
1. Tastes good.
2. Low carb.
3. Contains home made stock (as well as from carton).
4. Every ingredient came from pantry or fridge/freezer. (Found a lone onion in the pantry, so I didn't need to go to store after all.)
Bad things about the soup:
1. It ain't purty.
2. Pasta or rice or potatoes would add good taste as well as body to the soup.
3. The turkey stock is six years old.
4. It's almost summer. WTH am I doing making a big pot of soup?
