I'm building a PC for my nephew. I can put it together but when it comes to knowing the difference between parts i'm lost. Trying to stick with mostly all white parts for aesthetics.

The AMD - Ryzen 7 1700X 3.4 GHz 8-Core Processor and AMD - Ryzen 5 2600 3.4 GHz 6-Core Processor are priced similarly what is the difference?

1700x is first gen 8c/16t ryzen on 14 nm process.

2600 is 2nd gen 6c/12t ryzen on 12 nm process.

I would go with the 2600 because of the better ram compatibility plus newer manufacturing process.

If your nephew still needs the 2 extra cores, the 1700x isn't a bad buy.

If your nephew is purely gaming, the 8600k isn't a bad buy either.
