There are so many places in Rome and I haven't spent that much time there...so I'll let someone else help you here.
As for Florence, you have to get a Bistecca Fiorentina(Florentine Steak). Personally, I recommend Sostanza. You eat so much pasta and bread while you're in Italy, if you have a Florentine Steak at the end of your trip(when you're sick of pasta), it will be one of the most glorious steaks you will ever eat.
In case you don't get a lot of legit responses in this thread, there are quite a few good ones in this thread from a month ago... LINK
