Are you a fan of salads? Spinach or lettuce salad loaded with your favorite veggies (cuc, tomato, avocado) and some boiled egg. Add nuts (almonds, pecans, cashews) and seeds (chia, sunflower) . Try not to smother it in dressing that isn't good for you. I make my own dressing with olive oil, Braggs apple cider vinegar, Braggs liquid aminos, salt and pepper. Or...

Veggies in nut butter or hummus (assuming hummus is okay for Paleo). I've come across many suggestions for kabobs. Pick your meat and veggies and make enough for all week. I've never made kabobs so I'm not sure of the cooking time/method. I'd suggest bell peppers, onions, and mushrooms. You could always bring a kabob and have a salad on the side.

Have you tried a stew? You could make a lot at a time and this would be easy to bring to work and reheat. Loaded with veggies and whatever meat you choose.
Beef and sweet potato stew???

Chicken salad, tuna salad... Easy to eat on the go. You can use cucumber as the bread. Just make tiny bite size sammies.

I'm all about the raw fruits and veggies (must be the vegan in me). Apples in nut butter. Celery with nut butter and raisins. Bananas, pears or oranges. All of these can be an add on.

Hope some of these helps. Sounds like you just need a little change.
