I actually forgot To get bacon and didn't have a ham hock so I sautéed prosciutto. Then sautéed the greens... Added water.. Cooked and seasoned as I went. I left them on heat the entire 2 hours I cooked the roast so they're awesome.

I usually use Tasso, but I bet the prosciutto was awesome.
