Potatoes from a boil are great roasted the next day. Cut in some chunks, toss in some olive oil and roast on 425. They're creamy in the middle and crispy on the outside with great flavor.
I boil them a bit in crab boil sometimes just for that reason. Just stick them in a bowl with boil and water and microwave a bit until they are tender. Then, I let them soak a while. Dry them well and you're good to go.
