Broccoli is great in a boil. So is bok choy or baby bok choy. Really, about any green vegetable goes great in it.
I don't get people that just throw whole eggs in the boil with the shell on. The shell doesn't allow any of the boil into it so you are just eating a plain boiled egg when it's done. I do like the idea of poaching and will try that this year.

I've never seen anyone do this; I've always known to just crack the egg and drop it in the boil / broth.
