I'm unsure what y'all are bickering about, but if you're saying that you know what's in Chili's food items because your wife works in casual dining, that either has no correlation whatsoever.. OR your wife works at Chili's
One thing I can tell you that corparate chains have over mom and pops is cleanliness. I'm not saying it is always true, but I've seen enough places that looked like they haven't cleaned the vents or the fridges in months. Corporate places have checklists, standards, managers who get inspected and get bonuses based on their performances.

I don't think Chili's is shooting to be Mexican restaurant. I mean they got Mexican food on the menu, i.e. the now infamous skillet queso, but I would consider it a Mexican place.
