I use "Rebel Rub" which comes from the Rebel Butcher company in Flowood, MS. Olive oil and rub down heavy.
Then, smoke it in my Weber Smokey Mountain smoker with pecan for 5 hours (at least 165 degrees). Then put it in the crock pot on "keep warm" for another 6 hours or so. Touch it with a fork and it will fall apart.
