Because reality is boring IRL. It takes hundreds of hours of footage to find enough interesting bits to make a full season. If you stage stuff you cut the amount of time needed to get interesting footage which cuts your production costs which allows you to make more money.

If they are going to manipulate, at least do is discretely where its not painfully obvious.
