12-14 lb turkey. Brine the night before. Peanut oil.
Fry for 3 minutes a pound plus 5 minutes. I don't inject, I actually like the tast of turkey.
I have both the infrared electric fryer and a regular turkey fryer.
I prefer turkey fried in peanut oil to the electric fryer, but definitely a lot easier clean up with the electric fryer

If you are only going to fry one bird, use Lard.
Better flavor and cheaper... but its usually spent after one or two birds.
