Although, I do come from an area of Louisiana that made a roux-less gumbo. The darkness came from browning the onions just short of burning. It was a crude method, but when you're truly hungry, it counted as a gumbo.
I always imagined this recipe had developed because it was from a very marshy/humid area, and I imagine flour was both hard to get and keep.

Saw brisket gumbo with corn and potatoes in DC years ago.
