The sentence you quoted stated that:

There is a difference.
The point I was making is not that all studio recordings are inferior. The point is that it is much more impressive to me for a musician to be able to cut the extra fat live and put forth a quality product.
That live product that has been expertly trimmed of fat will always be more enjoyable to me if it is performed by talented and capable musicians.
