If my teams on offense I'd do a lot of what 7thWard said. You can't run side to side on a defense as fast as LSU's. I'd motion the slot guys to try and make the LBs clear out of one side and run right at them with a FB leading the way. The best way to beat a team with as much speed as LSU is to run right at them. That takes speed virtually out of the equation. For example, if I'm going to run an ISO to the left I'd get in the "I" with a three wide set, with my Z receiver on the left and the X and Y receiver to the right. I'd motion the slot or Y receiver to the left so the LB would have to cover him. I'd get the LT to simply turn his butt to the hole and push that end outward. The guard and center would have to double up on the DT, or one of them chip block and get to the next level. And the FB meet whoever he see's first in the hole. It's not going to be pretty, and not many long yardage plays, but that is an effective gameplan against this defense. Passing, you can't try to throw the long ball, WAY too much speed on the outside. Run mesh routes with the slot receivers, 10 yard drags, those types of things. And a lot of posts/in routes with the outside. And maybe the tight end runs a flag route.

On defense, I'd throw a lot of package blitzes at Mettenberger. He's been known to have a gunslinger type of mentality so, if you get pressure on him, he might throw a few up for grabs. The offense is usually 70/30 Run/Pass, so secondary needs to stay home because this is the type of offense that'll throw in a play action for a deep gain two or three times a game. Fill gaps on the run plays. RBs don't have a lot of top end speed except for Michael Ford. They will not beat you in a foot race, tackle well.
