Thoros was sent to proselytize in Westeros somewhere around the end of Aerys's reign/ beginning of Robert's, i believe because the Red Priests figured that a pyro like Aerys would be ripe for their religion. Thoros talks about it at one point in the books, but I can't recall which one. He doesn't really find true belief though until he is in the Brothers without Banners. Recall he had to use tricks for his burning sword before.

Mel was the strongest one in her order by far, and left after seeing her visions. She was pretty jealous when she saw what Thoros could do cause he's a drunk womanizing fighter.

He was one of the first one over the wall in Greyjoy's rebellion. He was also mentioned beating the Hound a few times in tourney's when he uses Sandor's fear of fire.
