I would DEFINITELY fit Cochon into your schedule, no question, especially since your SO doesn't like seafood. Maybe Saturday lunch?
August and Stella are both spectacular for dinner.
Stanley is very solid for breakfast/brunch.
Cafe Amelie has a GREAT courtyard for brunch, and although it is outside and it will be hot, there is a lot of shade.
Uptown, Clancy's is a great place, as is Brigsten's. Boucherie is great for the prices.

Went to dinner at Herbsaint on June 9th and was outstanding. I got the pancetta gnocchi and the lamb neck with saffron fideo and they were both superb.
I second the vote for Herbsaint.
